With summer break a week away, I wanted to share a delicious and melt in your mouth summer recipe that everyone will in enjoy.
1/2 Teaspoon Baking Soda
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
1-1/2 Cups Sugar
2 Oz Cream Cheese, Softened, Cut Into Pieces
1 Large Lemon
6 Tablespoons Unsalted Butter, Melted
1/3 Cup Vegetable Oil
1 Large Egg
1 Tablespoon Milk
1 Tablespoon Lemon Juice
1 Teaspoon Vanilla Extract
1 Teaspoon Lemon Extract
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
1-1/2 Cups Sugar
2 Oz Cream Cheese, Softened, Cut Into Pieces
1 Large Lemon
6 Tablespoons Unsalted Butter, Melted
1/3 Cup Vegetable Oil
1 Large Egg
1 Tablespoon Milk
1 Tablespoon Lemon Juice
1 Teaspoon Vanilla Extract
1 Teaspoon Lemon Extract
Cookies:
- Preheat the oven to 350 degrees F.
- Zest and squeeze juice from the lemon
- In a large bowl mix sugar, lemon zest and cream cheese.
- Pour the warm butter over the cream cheese mixture and whisk to combine. Whisk in the oil, egg, milk and lemon juice until smooth.
- Mix in flour, baking soda, baking powder, and salt until all ingredients are mixed in and batter is smooth (try not to over mix)
- In two separate bowls : pour in a half a cup of sugar into one and into the other a half a cup of icing sugar. Roll about one heaping tablespoon of dough into a ball then, roll the ball in the white sugar, after roll lightly in the icing sugar. Place ball on to a baking sheet, spacing the balls out as they will expand
- Bake until the cookies are golden brown around the edges for about 12-15 minutes. The tops of the cookies should look slightly cracked.
