Lemon Crackle Sugar Cookies


With summer break a week away, I wanted to share a delicious and melt in your mouth summer recipe that everyone will in enjoy. 


Ingredients:
     2-1/4 Cups All-Purpose Flour
     1/2 Teaspoon Baking Soda
     1 Teaspoon Baking Powder
     1/2 Teaspoon Salt
     1-1/2 Cups Sugar
     2 Oz Cream Cheese, Softened, Cut Into Pieces      

     1 Large Lemon
     6 Tablespoons Unsalted Butter, Melted
     1/3 Cup Vegetable Oil
     1 Large Egg
     1 Tablespoon Milk
     1 Tablespoon Lemon Juice
     1 Teaspoon Vanilla Extract
     1 Teaspoon Lemon Extract

Cookies:
  1. Preheat the oven to 350 degrees F.
  2. Zest and squeeze juice from the lemon 
  3. In a large bowl mix sugar, lemon zest and cream cheese.
  4. Pour the warm butter over the cream cheese mixture and whisk to combine. Whisk in the oil, egg, milk and lemon juice until smooth.
  5. Mix in flour, baking soda, baking powder, and salt until all ingredients are mixed in and batter is smooth (try not to over mix) 
  6. In two separate bowls : pour in a half a cup of sugar into one and into the other a half a cup of icing sugar. Roll about one heaping tablespoon of dough into a ball then, roll the ball in the white sugar, after roll lightly in the icing sugar. Place ball on to a baking sheet, spacing the balls out as they will expand 
  7. Bake until the cookies are golden brown around the edges for about 12-15 minutes. The tops of the cookies should look slightly cracked.
